Risotto with artichokes



Questo è il periodo dei carciofi, ne approfitto per preparare delle ottime ricette. Hanno poche calorie,  sono anche depurativi e di conseguenza contribuiscono a mantenere la pelle healthy and glowing. And 'the case to say "say healthier and more beautiful."



Serves 4 Ingredients 320 g rice
carnaroli
3 Roman artichokes

1 shallot 1 cup white wine broth


2 sun-dried tomatoes 4 tablespoons extra virgin olive oil Parmesan
parsley


a knob of butter 1 lemon salt and pepper




Procedure Prepare the vegetable broth. Clean leaves and tough beards inside the artichokes, slice them and dip them in water and lemon. Finely chopped shallots and sauté with oil in a large pan with high sides. Paid well drained and dried artichokes, cook on low heat for a few minutes, add salt and pepper. Add the rice, toast, pour the wine, let evaporate and take a cooking adding a little at a time with the hot broth, add the diced sun-dried tomatoes. When cooked, season with salt and pepper, add chopped parsley, the butter and parmesan, stir and let stand 2 minutes with the lid. Serve and serve.
